Weapons

To unlock more weapons/items you must collect a certain amount of ghosts (by eating other racers) in each cup.

Black Bomb: Eat at least 5 ghosts in Cherry Cup

Galaga Ship.: Eat at least 12 ghosts in the Classic Cup.

Sir Pac-A-Lot.: Eat at least 10 ghosts in the Watermelon Cup.

Siria (Ice Dragon) Weapon.: Eat at least 8 ghosts in the Grape Cup.

Courses

Complete the following Gold Medals to unlock courses.

Easy Classic Cup: Get a Gold Medal in Easy Watermelon Cup

Easy Rally Cup: Get a Gold Medal in Easy Classic Cup

Easy Watermelon Cup: Get a Gold Medal in Cherry Cup and Grapy Cup

Hard Classic Cup: Get a Gold Medal in Hard Watermelon Cup

Hard Rally Cup: Get a Gold Medal in Hard Classic Cup

Hard Watermelon Cup: Get a Gold Medal in Hard Cherry Cup and Hard Grape Cup

Nightmare Classic Cup: Get a Gold Medal in Nightmare Watermelon Cup

Nightmare Rally Cup: Get a Gold Medal in Nightmare Classic Cup

Nightmare Watermelon Cup: Get a Gold Medal in Nightmare Cherry Cup and Nightmare Grape Cup

Normal Classic Cup: Get a Gold Medal in Normal Watermelon Cup

Normal Rally Cup: Get a Gold Medal in Normal Classic Cup

Nightmare Difficulty

To Unlock Nightmare Difficulty you must complete each cup on hard mode. You also have to come in first at the end of the cup. You don't have to come in first on each race, just get a gold at the end. This includes the Rally Cup.
